JUNK FOOD - BBQ: WHY IS
IT SO VERY POPULAR?
Barbecue (BBQ) is a very
attractivemeal - themouth-water-
ing smell and taste are very
tempting.Nevertheless, take note
that benzopyrine, a cancer caus-
ing (carcinogenic) substance,
may be formed during BBQ.
Moreover, high temperatures ap-
plied to food may produce
acrylamide that is carcinogenic in
animals, even though no definite
conclusion is reached for humans.
Nevertheless, benzopyrine is
more carcinogenic and is pro-
duced when any fat is heated to >
160
o
C. In case BBQ food is just
partially cooked, it also has the
same risks of most other un-
cooked food.However, as nobody
seems tobeoverly concerned, we
can think of these probable
reasons: (1) All the above-men-
tioned risks are not very clear cut;
only the longer-termeffect ismore
definite (2)The temptation of such
delicious food is very hard to re-
sist (3) The habit is most probably
a "left over" of our ancient culture,
ever since the firewas discovered.
As apparently, the culture of BBQ
is here to stay, take care to take
such food in moderation and
infrequently; while enjoying your
BBQ, remember to take lots of
fruits and vegetables so as to re-
duce the higher carcinogenic ef-
fect of BBQ food.

燒烤
為什麼大受歡迎？
將一串串鮮嫩的肉串並列擺放在炭火熊熊的烤槽上，不一會
便㝧㝧冒油，待六七分熟時再撒上胡椒粉等調料，頓時濃香四
溢，那顏色、那味道，簡直令人饞涎欲滴⋯⋯這絕非誇張。每到
傍晚，喧囂熱鬧的街路上，那各種各樣的燒烤鐵槽就拉開陣勢，
炭火伴著狼煙騰空而起，吃的人是滿臉陶醉，仿佛盲了一樣，全
然看不見燒烤者滿手的污漬，四周飛揚的塵土，更是不思肉的來
路，是否是什麼死貓、死狗、死耗子⋯⋯（當然，也應該承認絕大
多數燒烤用肉是合格的，特別是正規大飯店的。）這些統統靠邊
站，在意的只有那滿嘴的香氣，先解完饞再說。毋庸諱言，這種
吃法有失文明；最重要的是，燒烤好吃，可隱患多多。
引致癌物質苯丙比
首先，是在燒烤過程中，會產生一種引致癌物質苯丙比。我
們知道，食物在高溫加熱時會產生一種叫做丙烯㢑胺的物質，經
過動物實驗證明，丙烯㢑胺對動物有致癌作用；但對人是否有致
癌作用尚無定論。而這苯丙比，是一種比丙烯烍胺還強的致癌
物，當油脂被加熱到160攝氏度以上、食用油被加熱到冒煙的時
候，就會分解
生成苯丙比，
這種強致癌物
混入燒烤食品
之中，被食用
以後進入胃腸
和消化系統。
丙烯烍胺只是
澱粉被加熱時
會產生，而苯
丙比則不是，
它是在油脂和
任何含油物質
被高溫加熱時都會產生。甚至包括大米，因為大米也含有一定量
的油脂，燒飯時糊掉的那一層所謂鍋巴，其實就是充滿了苯丙比
的東西。
愛吃燒烤的人應該注意：有關化驗發現，一串烤羊肉串所含
的苯丙比是一支香煙的500倍！可見其毒性之大。
其次，燒烤是六、七分熟、頂多七、八分熟，這餘下沒燒熟
的部分，如果含有沒被殺死寄生蟲，就很容易順著消化道進入人
體。這決非危言聳聽，很多腦囊蟲患者都是吃了未熟透的、含有
寄生蟲的肉類而患病的。筆者一位鄰居，吃了未熟透的肉患上腦
囊蟲病以後，經常發作，抽風、瘖語、口吐白沫⋯⋯醫生斷言，
這人沒法長壽、早晚是個問題。
