Proteins and Our Health
Proteins are made of 20 different amino acids; peptides, with their shorter chains, often adopt 3-D structures in coils or in folds
like saw teeth – all very important functionally. Folding requires companions: “chaperonin” and “heat shock proteins”, e.g.,
Hsp70. When folding is abnormal, proteins coagulate, are denatured and accumulate inside the cell causing diseases or even
death. Alzheimer’s disease – one of the commonest types of senile dementia, arises from the accumulation of a
β
-amyloid
protein in the brain to form amyloid plaques and neurofibrillary tangles. Gradually, normal brain function goes; senile dementia
results. Thus,
β
-amyloid protein is the “culprit” for Alzheimer’s disease. Another misfolded protein called “prions” is the
infectious agent in “mad cow disease” – causing the brain to have holes under the microscope, just like a sponge; there is
degeneration of physical and mental abilities and ultimately death. As beef may also be contaminated and that prions are
resistant to heat, never take any such beef, no matter how well cooked they are. Recently, there is hope that EGCG from green
tea may tackle such misfolded proteins.
