Concealed Hazards in Our Diet
As malachite green, a popular, affordable anti-microbial (possibly carcinogenic), preserves live fishes, choose local fishes
with short transport times. In Nanjing, 30 people had rhabdomyolysis (destruction of voluntary muscles) presumably
from contaminated crayfishes. With an enormous appetite, frogs are more prone; the worst is enhancing maturity of eels
by contraceptive hormones. Insecticides often remain on the leaves of vegetables: being not water soluble, they are never
eradicated by mere rinsing in water. As rivers and lakes are contaminated by heavy metals and micro-organisms, beware of
shellfishes as their shells preclude achieving a high-enough cooking temperature. Vermicelli, yuba and flour may have “rongalit”
(sodium formaldehyde sulfoxylate: an industrial whitening agent) for better appearance but may cause dizziness, headache,
diarrhea, nausea and vomiting, etc. Beware of street cooked-food stalls using “hogwash oil”: recycled restaurant wastes as re-
used oil is carcinogenic! Trans-fat is present in cakes, biscuits and deep-fried items and even “Coffee Mate”! Beware that “drinks”
are not real fruit juices. Take care!
