The Rice Cooker Confusion
Rice cookers enable perfect rice cooking but the inner pan coating created a stir, e.g., the non-stick Teflon coating by DuPont
– featuring PTFE: at high temperatures, substances carcinogenic to laboratory animals may be released. Although the human
carcinogenicity is inconclusive, DuPont, for example, had been fined USD 165 million. Teflon is still permissible before 2015, but
PTFE coatings must not cause any environmental hazards. Thus, the Kan Electric Appliance Co. advocates Yixing purple sand electric
rice cookers and righteously declared patent for it. Other manufacturers, e.g., Midea, would defend the use of metal for the inner pan, as
evidence against it is lacking. Yet, Panasonic, Supor, Sanyo, Electrolux, etc. offer “greener” ceramic coatings: stable even at very high
temperatures. Galanz and others also promote their hard-wearing black-crystal coating: non-stick, durable: much safer than Teflon.
Inner pans of stainless steel are more durable than alloy-aluminum (with non-stick coating) but scorched rice sticks to stainless steel.
Panasonic pioneers far-infrared rice cookers: even heating and efficient. Other than durability and convenience, safety is first!
