Appropriate Food Preparation for Best Health
How we prepare our diet makes a lot of difference: (1) Boil water to 100°C for 3 minutes to get rid of halogenated hydrocarbons and
chloroform (2) Cook tomatoes: lycopene (effective for preventing cerebro-vascular diseases and cancer) is released with heating (3)
Take garlic raw: thin slices are left to air dry for 15 minutes to form allicin: for cancer prevention (4) As tofu lacks essential amino
acids, take it in combination with meat; combined with food containing vitamin D (spare ribs, fish head, etc.) enhances calcium
absorption (5) Take radish raw: may combat viruses; the rich content of interferon inducers (to combat cancer) may be destroyed
upon heating; cook carrots for best carotene content but avoid taking with alcohol (6) Cooked corn releases ferulic acid with some
cancer preventive properties (7) Take small, fresh fish whole: may prevent lung cancer (8) Sweet citrus has more zeaxanthin for cancer
prevention (9) Boil peanuts in water (10) Dried shitake tastes better (11) Soak beans in water before cooking (12) Boil spinach to
extract the oxalate; otherwise oxalate combines with calcium to form insoluble calcium oxalate. Knowledge is power!
體影響不大;後者水溶解度高,故用菠菜煮
湯,會使大量草酸鉀溶於湯裏,遇鈣
形成不溶於水的草酸鈣,在消化道
裏沉澱,既可妨礙人體對鈣的吸
收,還可能誘發結石症。因而直
接用水煮菠菜並喝湯的做法不符
合科學,較好的辦法是將菠菜加
水稍煮後,倒掉湯,涼拌吃。另
外,吃菠菜後多喝些水,增加尿量,
可大大減少結石症形成的機會,就安全
了。
