A Hidden Killer: “Antinutritional Factors”
“Kidney beans should be well cooked to prevent poisoning”, Hainan Residents are warned on antinutritional factors in food. Beans, e.g.,
kidney beans and hyacinth beans, have protease inhibitors, saponins, hemaglutinins, etc. – destroyed by thorough cooking; or the gut
may be irritated and congested. Alcoholic drinks interfere with vitamin absorption. Unpolished grains also have protease inhibitors;
kales and cruciferous vegetables, e.g., cabbage, shepherd's purse, radish, onion, cauliflower, etc. have sulphatide: disturbs thyroxine
synthesis. Note cucumber, oenanthe, cauliflower and pumpkin have ascorbate oxygenase that destroys vitamin C. Antithiamines in aquatic
products, tea and wine prevent absorption of vitamin B1; similarly, tannic acid in coffee, tea and red wine reduce iron absorption. Even
nutrients affect one another, e.g., food rich in vitamin C reduces calcium absorption; excessive calcium intake affects iron absorption;
vitamins B1, B2 and B6 should be taken together for best results; similarly, saturated, monounsaturated and polyunsaturated fatty acids
should be taken in equal proportions; even fiber-rich food lowers calcium absorption!
