Springtime Strawberries: Fragrant & Ideal
Strawberries have anti-oxidant properties and are rich in pectin for fat metabolism; the phenol in strawberry helps repair of
subcutaneous fibers, enhances skin metabolism and softens scars on the skin. Paul Thornalley, University of Warwick, UK, found
strawberry extracts activate a protein ‘Nrf2’ which increases antioxidant and other protective activities and decrease blood sugar and
blood low density lipoprotein (LDL, bad cholesterol): reduce risk of diabetes and heart diseases. It is best to consume strawberries after
meals as they are rich in pectin and cellulose promoting gut motility and digestion, preventing constipation and hemorrhoids. Yet, as
strawberries are relatively rich in calcium oxalate, those with kidney oxalate stones should take care. Strawberries can even be used as
food therapy for: indigestion and abdominal distension, gum bleeding, aphthus ulcers, dry cough, sore throat, hoarseness of voice,
hangover, malnutrition or infirmity. Pick only ripe strawberries as they would not ripe after picking; avoid deformed strawberries. Wash
thoroughly in running water to rid insecticides, soil, bacteria, dirt and insect ova; washing in rice water helps to neutralize insecticides;
washing in salt water helps to clear insects and ova. Above all, avoid using detergents!
