NUTRITIONAL
FACTORS
CONCERN
EVERYBODY
As people get older, it pays
to
maintain
a
good quality of life. Nutrition
is
most important
-
with increasing age,
the calories required would gradually
diminish. Calories
come
from
carbohydrates, protein and
fat.
Protein
may be of animal or plant source, al-
though the former
is
considered as
first
class protein,
not
all meaty animal parts
are
good
-
avoid
internal
organs be-
cause
of
the purine content
-
excessive
of
these precipitates gouty attacks. Ex-
cessive fat
is
also undesirable, as high
cholesterol
leads to
atherosclerosis or
hardening
of the
blood
vessels;
however,
too
low
is
also
not
appropriate,
as
nerve transmission may
be impaired. Fibers
in the
food promote
better
bowel
opening.
Soluble fibers
and oats
are
now
very
popular.
Unfortunately, without the
habit of
drink-
ing 2-3
glasses of
milk a day,
the
Chi-
nese
diet
usually has
sub-optimum
calcium.
Either
take
calcium supple-
ments
or
more calcium-rich
food,
e.9.,
tofu and other bean curd products; also
avoid food
that
precipitates dietary
calcium, e.9., spinach and amaranth
contain
oxalic acid
that
combines with
dietary calcium
to
form
the
insoluble
(non-absorbable) calcium
oxalate.
Vi-
tamins are best obtained from
a
bal-
anced diet. Nevertheless,
in
a
large
study involving
11,000
elderly
folks,
those taking vitamin
C &
E
supplements
consistently (as anti-oxidants)
ap-
peared
to
have lower mortality
rates,
especially that
from
coronaries.
