scare when
unscru-
pulous merchants decided to
employ Susan
I
as
food
additive. Sudan
I is
a dye
with
a
chemical formula
of
1-
Phenylazo-2-Naphthalenol. lt
is
an
industrial coloring that
has ever been applied
to
food-
stuffs but
is
now banned
in
many countries
due
to reports
on
its
possible health risks.
ln
China,
technology
on
food
additives started late but
is
rapidly catching
up.
Moon-
cakes
are
now
softer
and
easier
to
keep,
thanks
to
additives. Flour relies
on
benzoperoxide
for
its white-
ness, production rate and
re-
sistance
to
fungi
during
storage.

intake, e.9.,

sodium
saccharin,
it
is

mg/Kg; GRAS: generally
re-
garded as safe;
LD50: the
dose
of
the additive that
is
