"REDUCE OIL USAGE BY HALF": A PERTINENT STEP FOR SCIENCE TO BENEFIT OUR LIVES
At present our people are consuming excessive oil - in large cities, the average oil usage is >44g/day, much higher than the
recommended 25g: we have 90 million patients with hypertension; 40 million, diabetes; 0.15 billion suffering from cerebro-
vascular diseases. Use oil with more unsaturated fatty acids (UFA): (1) free from over-burdening our cerebro-vascular function (2)
enhances our health. Safflower oil has >85% UFA but is costly; sunflower oil is a close "second best" to safflower oil; otherwise,
olive oil, as used in the West, may also be used. As salad oils are used without cooking, they differ from cooking oil in having a
stricter control of their melting points, but, otherwise, they may also be used for cooking, except frying. The best way to control
the use of oil is to calculate the monthly usage for the family according to the stipulated 25g standard and regulate from there. In
fact, peanut oil is also a good choice. Avoid repeated deep frying with the same oil as polycyclic aromatic hydrocarbons,
e.g., benzopyrene (cancer causing) may be produced. For best health, keep the ratio of animal to vegetable fat at a level of 1:2.
