INDISCRIMINATE USE OF
COLORING: A CRISIS
S i n c e t h e f i r s t d y e
mauveine was synthesized, our
health had been threatened.
Last year, in Hebei province,
China, unscrupulous duck farm-
ers had put Sudan Red IV in the
duck feed to render the yolks a
more intense red color - a sign
of quality eggs, as they believe
the red color was from the
shrimps in ducks' diets. The
Government Food Safety offi-
cials had revealed an unprec-
edented amount of dye in the
eggs: 0.137 mg per kg. Sudan
Red is commonly used in indus-
trial products like flooring and
shoe polish; it was not permit-
ted for food products. Research
found it to cause cancer in
animals, let alone causing DNA
mutation in human liver cells. As
compared with Sudan Red I,
Sudan Red IV has not only a
brighter red color but also a
higher toxicity. The European
Union had in 1995 banned its
use in any food. The Interna-
tional Agency for Research on
Cancer (IARC) had assessed
the dye as Group 3 genotoxic
carcinogens. Most consumers
are already aware of the expiry
dates of food; they are also
aware of the harm due to
preservatives; however, few of
them knew synthetic coloring is
harmful to health. Beware, it
may threaten your health!
