The various chemical elements
of
the
body come
from external
sources.
Even minute quantities
of
"trace ele-
ments"
or
"minerals"
have
to
be
absorbed. Minerals are important
for
normal physiological function
and
metabolism. Vitamins (organic
sub-
stances that are vital to the growth, de-
velopment and maintenance of normal
metabolism)
are
also required
in
minute
quantities. As vitamins
B
and
C
are not
stored
in
the body, a
regular
supply
is
essential. Vitamin C
is
destroyed
upon
cooking or prolonged storage; hence
the
importance of fresh fruits. Vitamins
A,
D
and
E are
stored
in
the liver
so
that
overdoses would cause toxicity.
The main sources of minerals and vita-
mins are from
fruits
and vegetables,
cereals and animal constituents
of
food.
Always maintain a well-balanced diet
in
order to derive a good source
of all
minerals and vitamins.
Forthe
Chinese
diet
with fewer diary products, e.9., milk
and cheese, bean-curd products are
good sources of
calcium
but
take
note
that spinach and water-spinach prevent
absorption
of dietary calcium. Calcium
in bones are
dissolved only
by
adding
vinegar, e.9., the ginger-vinegar prepa-
ration
after delivery. lodine
is
found
in
seajood
or
even
salt
made
from sea-
water. lnland dwellers may require
io-
dized salt to get
enough
iodine.
